Dietitian: Local foods let restaurants highlight flavors
Many consumers may have the idea that it’s expensive and harder to prepare local foods, but the reality is that, with some planning, it can be less expensive and easier to eat local, says dietitian and author Jasia Steinmetz. Restaurants can cut costs by buying local as well, and featuring a local menu often allows chefs to create dishes with unique ingredients they can’t get from conventional vendors.
