How lobsters went from being “cockroaches of the sea” to a delicacy

Lobster was so plentiful during the American colonial period that Native Americans and colonists alike used it for fertilizer. It was actually considered the “poor man’s” meal, better fit for prisoners and slaves than a gentleman’s table.

What changed? Once canning allowed lobster to be stored and transported to the lobster-free hinterland and railroads brought tourists to the northeast, lobster became a commodity. Prices began to surge and the shellfish became a delicacy. See the full details at the article.
