How to have a tasty vegetarian Thankgiving

Put that tofurky down! Vegetarian Thanksgiving doesn't have to a poulty-shaped piece of beancurd to be interesting. In fact, it can be vibrant and tasty, and NPR shows you how. Last year, the radio station's web site published four scrumptious vegetarian recipes for the upcoming holidays:

- Mushroom and spinach galette

- Baked pumpkin with root vegetable stew

- Stuffed acorn squash

- Vegetarian gravy

I was skeptical. Now I'm a believer.

I actually saw that! That's pretty cool. Don't worry, I don't think tofurkey is lame--these recipes just look so darn tasty!
