This poster doesn't really make sense. Why would most tart and most sweet be right next to each other? Tart AND sweet isn't really possible. The circle graphic implies some sort of continuous loop, which isn't quite accurate. And, what does cooking with apple entail if not baking? Is it making applesauce? If so, why not just say that?

Just sayin'.

It would be more interesting to see a chart that shows how grannies and the delicious apples (red and yellow) have been bred over the years to produce the sweeter, less tart (or more tart) hybrids that make up the rest of the wheel.

I agree with laura's comment--the info seems more suited to a linear psectrum between two poles; sweet vs tart. And I wondered about the sooking. All I could think of was applesauce, or possibly some kind of sauteed topping for something else.
I'd really like to se the old, original US heritage "ice cream" apples and other varieties included that have basically died out. I wonder if a simple sweet vs tart polarity would even apply to those.
